Choose one main entree from the following lists, then select one side, vegetable, salad and bread:

Beef Entrees

  • Roast beef; served sliced au jus
  • Meatloaf Italian Style: beef is mixed with bread crumbs and seasonings
  • Shepherd's Pie: A mixture of lean ground beef, peas and carrots and seasonings and topped with whipped mashed potatoes and cheddar cheese
  • Old fashioned beef pot roast: beef is simmered with carrots, and onions
  • Tamale Pie: a mixture of ground beef, corn, black olives, corn meal, tomato salsa and seasonings; topped with grated cheese
  • Chili con Carne: this chili is loaded with beef and seasoned
  • Beef Bourguignon: Beef is simmered with onions, mushrooms, and carrots in a burgundy sauce
  • Beef Stroganoff: Chunks of beef are simmered in a mushroom, onion and sour cream sauce

Poultry Entrees

  • Roast turkey; served sliced
  • Roasted chicken cut into serving pieces
  • Chicken cordon bleu; breaded chicken breast is rolled with ham and provolone cheese
  • Jambalaya: a Southern favorite:a mixture of chicken, Italian sausage, baby shrimp are seasoned

Pork Entrees

  • Country style pork ribs: boneless country style pork ribs are baked with seasonings
  • Roast porkloin
  • Honey Baked ham

BBQ

The following are just a couple of menu choices.

  • BBQ Beef: Beef tritip is served sliced with a light amount of BBQ sauce
  • BBQ Pork: boneless country style pork ribs are roasted and simmered in BBQ sauce

Seafood Entrees

  • Shrimp and pasta: Pasta is laced with a mixture of shrimp and mushrooms, in a light alfredo sauce.
  • Tilapia; served with a light lemon butter sauce
  • Catfish nuggets

Vegetarian Entrees

  • Tamale Pie: a mixture of corn, black olives, corn meal, tomato salsa and seasonings.
  • Quiche: Light pastry crust is topped with a mixture of eggs, milk, cheese, and green onions
  • Chili Beans
  • White Beans w/seasonings
  • Macaroni with 3 cheeses (cheddar, jack, parmesan)
  • Red beans and rice

Sides (all sides listed are vegetarian)

  • Quartered Potatoes: wedges of potatoes are sautéed with olive oil, garlic and seasonings
  • Potatoes au gratin
  • Mashed potatoes
  • Scalloped potatoes
  • Garlic mashed potatoes
  • Rice pilaf
  • Herbed rice
  • Lightly curried rice

Vegetables

  • Corn and red peppers: corn niblets are simmered with chopped red bell peppers
  • Mixed vegetables: a mix of vegetables are sautéed with olive oil, garlic and seasonings
  • Green beans: sautéed with olive oil, garlic and seasonings
  • Steamed Carrots
  • Zucchini sautéed with olive oil and garlic

Salads

  • Caesar salad
  • Green salad with choice of dressings ; Italian vinaigrette, Balsamic or Ranch dressing on the side.
  • Mediterranean style salad: Mixed greens, artichoke hearts, garbanzo beans, tomatoes, black olives, and feta cheese; Italian or balsamic vinaigrette dressing on the side.
  • Cobb Salad: greens with Monterey jack and cheddar cheeses, black olives, garbanzo beans, tomatoes and blue cheese crumbles; Italian vinaigrette, Balsamic or Ranch dressing on the side.
  • Italian style salad: Greens with black olives, parmesan cheese, artichoke hearts and tomatoes; Italian or balsamic vinaigrette dressing on the side.
  • Southwestern style green salad: salad greens with black olives, black beans, tortilla chips, tomatoes; Italian vinaigrette, Balsamic or Ranch dressing on the side.
  • Spinach salad with cranberries and Raspberry dressing
  • Bean salad: a mixture of kidney beans, garbanzo beans , artichoke hearts, onions, and garlic, are tossed with Italian vinaigrette
  • Cole slaw: cabbage, raisins and dressing
  • Old fashioned Macaroni Salad
  • Old fashioned Potato Salad
  • Italian Style Pasta salad: pasta is tossed with black olives, artichoke hearts, sundried tomatoes, green onions and Italian vinaigrette
